A More "Noellie" Americana Flag Cake

We all know the classic Fourth of July flag cake—usually a standard white sheet cake topped with cool whip and a basic berry grid. This version is something entirely different. It’s a more Noellie version of that classic Americana tradition, swapping out the predictable elements for sophisticated, intentional flavors.

Instead of a heavy box-mix base, it starts with a light, tender lemon olive oil sheet cake. The stark white frosting is elevated into a billowy, cloud-like whipped mascarpone sweetened with wildflower honey and real vanilla bean paste. But the real secret? The white stripes aren't just empty space or extra frosting—they are rows of thinly sliced, perfectly ripe summer white peaches. It's thoughtful, slightly architectural, and tastes exactly like summer has a favorite flavor.

Ingredients

For the Lemon Olive Oil Sheet Cake

Dry Ingredients:

 2 cups all-purpose flour

 1\frac{1}{2} tsp baking powder

 \frac{1}{2} tsp fine sea salt

Wet Ingredients:

 3 large eggs, room temperature

 1\frac{1}{4} cups granulated sugar

 \frac{3}{4} cup good quality extra-virgin olive oil

 \frac{3}{4} cup whole milk

 Zest of 2 large lemons

 3 tbsp fresh lemon juice

 1 tsp pure vanilla extract

For the Whipped Mascarpone Frosting

 2 cups mascarpone, cold

 1 cup heavy whipping cream, cold

 3 tbsp wildflower honey, plus more for finishing

 1 tsp pure vanilla bean paste

 Pinch of fine sea salt

For the Flag

 2 cups fresh blueberries

 2 cups fresh raspberries

 2 cups fresh strawberries, sliced into thin half-moons

 3–4 ripe white peaches, sliced very thin

 Edible silver luster dust (optional, but worth it)

 Local wildflower honey, for drizzling

Instructions

1. Bake the Cake

1. Preheat and Prep: Preheat your oven to 350°F. Generously grease a 9×13-inch baking pan, then line it with parchment paper.

2. Whisk Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt until well combined; set aside.

3. Beat Eggs and Sugar: In a separate bowl—or in the bowl of your stand mixer—whisk the eggs and sugar together vigorously until the mixture turns pale and slightly thick (about 2 minutes).

4. Add Remaining Wet Ingredients: Stream in the olive oil slowly while whisking, then add the milk, lemon zest, lemon juice, and vanilla extract. Mix until everything is smooth and fragrant.

5. Combine: Add the dry ingredients to the wet mixture and fold gently until just combined. Be careful not to overwork the batter—a few small streaks of flour are perfectly fine.

6. Bake: Pour the batter into your prepared pan and smooth the top. Bake for 28 to 32 minutes, until the center is set and a toothpick inserted into the center comes out clean.

7. Cool: Let the cake cool completely in the pan before frosting—completely, not mostly.

2. Make the Frosting

1. Whip: Combine the cold mascarpone, cold heavy cream, honey, vanilla bean paste, and sea salt in the bowl of a stand mixer fitted with the whisk attachment.

2. Watch the Texture: Beat on medium speed until the mixture begins to thicken, then increase the speed to medium-high and whip until it holds soft, billowy peaks.

Note: Do not over-whip—you want something that looks like a cloud, not like butter.

1. Frost: Spread the frosting in an even, generous layer over the cooled cake.

3. Assemble the Flag

1. The Blue Canton: Picture the upper-left corner as your canton—that is where the blueberries go, arranged in careful rows to cover roughly a third of the width and half of the height of the cake. If you have edible silver luster dust, brush it lightly over the blueberries with a dry pastry brush.

2. The Stripes: Lay your stripes across the remaining surface:

 Red: Rows of raspberries and flat strawberry slices.

 White: Take your time with the peaches—fan the slices gently so they lie flat and overlap just slightly, creating an almost architectural look.

3. The Drizzle: Just before serving, drizzle the entire surface with a slow, generous pour of wildflower honey.
