This year, my mornings need to carry me through a lot. Iām in my final semester of graduate school, working on three Noellie books, and managing The Noellie Foundation alongside some exciting partnerships in the works for the next few months.
With so much to look forward to, I definitely need a hearty breakfast to start my day.
What Youāll Need:
One thick slice of sourdough bread, Graza olive oil, two eggs, a splash of milk, garlic powder, onion powder, salt and pepper, homemade raspberry jam, one ripe avocado, and shredded cheese.
How to Make It:
Start by toasting your sourdough in a generous drizzle of Graza olive oil, flipping to coat both sides until itās golden and hearty. Set aside.
For the eggs, whisk them together with a splash of milk, garlic powder, onion powder, salt, and pepper until you get a nice creamy consistency. Heat that same pan over medium with a bit more olive oilāmake sure itās already hot before you pour in your egg mixture. Let the eggs spread across the whole pan, then gently push from the outside in to create soft, fluffy curds.
While those are cooking, spread your homemade raspberry jam on the toast, then layer on smashed avocado seasoned with salt and pepper. Top with your finished eggs and a generous sprinkle of shredded cheese.
